Has anyone used the UMAI drybagsteak bond? it is a vacuum sealing system that uses a special bag to dry age beef. the bag allows moisture to permeate out while blocking oxygen and off-flavors.

I have an independent refrigerator right next to my extra beer refrigerator so i can maintain low temp without opening and shutting the door on a regular basis.

One thing to keep in mind when dry aging beef is the humidity of your cooler. Ideally, it wants to be 55-60%.
I use Dry Bags. They work very well but...the vacuum sealer they supply you with is a bit of a nightmare to use. Ask for LOTS of practice bags. It can be very frustrating but if you get a good seal you will be rewarded in a few weeks time.
