dry rub on too long? | Cookshack

My party was delayed. I have my baby backs coated with a standard dry rub. Ie paparika brown sugar little cyan and ect..
wrapped in celephane in the frig. It will be 48 hours before they go on the grill. Is that too long to have them coated?

I've had mine rubbed and in the fridge for 48 hours before, they turned out great. What's that old saying about the best laid plans....sometimes s--t happens and you just can't get to them. They'll be fine.

You didn't say anything about salt in the rub, if the salt content is low, you should be fine. A high salt content would make these ribs quite salty in flavor left on for 48 hours. They could taste like ham.

I like to apply rub and mustard 48 hours ahead then suck them down in a vacumn Seal a Meal bag. Always had good results.
