Just took off my Elk jerky, came out fine! I had 3# of Elk lion, used Hi Mountain original seasoning, marinated it for 48 hours. Put it on my stainless rods, preheated the AmeriQue to 250*, put the jerky in for 3-1/2 hrs. at 195*, then held at 140* for about 20 minutes. Used 3 oz. hickory and 2 oz. of cherry. GLH method worked great as usual.
