I wanted to thank everyone at Cookshack and Head Country for the fantastic class that I participated in on 12/8. Paul Schatte and Fast Eddy are excellent teachers with very differnt styles of cooking. I liked hearing their different opions on smoking. We smoked ribs and chicken and were thoroughly indoctrinated into the mysteries of pork shoulders and briskets. I was amazed at all the brining, rubbing, injecting and saucing! The best part was getting to eat all of the good food! I am not interested in competing, so I took the class to improve my smoking techniques. I definitely received a graduate school education in the world of smoking! It was very nice to meet the Cookshcak staff, from Stuart to Smokin Okie to Caylie, everyone is a class act and made us feel very welcome. Thanks for the experience!
