I cannot tell you all how thankful I am for attending the Recent cooking class with Fast Eddy, Stuart Powell, Paul Shatte and SmokinOkie. These guys really know what hospitality is. The cooking class was exceptionally well done. It was a long day of lecture and hands on work, but the team did not waiver from their duties. Nodody left with an empty stomach. What they did leave with was an pretty good understanding of what BBQ competition is all about. Even though there were varying opinions by each cook (as there should be), you could not help but be impressed with the knowledge that only comes from experience. All of the people at Cookshack (and I mean all!) are some of the nicest people you would ever want to meet. They treated every one of us like we were family. I can also say the same for Head Country Food Products. So I wish to say thank you all for one of the most fun and informative experiences that I have had for a long time. I will also enjoy the new friends that I made on the trip.

I want to thank the CS staff,fast eddy,paul,smoklnokie and david for thier warm hospitality. The friday nite dinner was great, and everyone made you feel very welcome. The class was so much more than expected. I would recomend anyone thinking about going next year , get your spot early! Fast eddy ,paul,smokinokie shared so much experience and knowledge with the class.When it was all over, I went away with a newfound excitement to compete again at our next cookoff next year. I also met alot of new friends ,it was just an awesome experience! Again thank you,johnnie myres. A.K.A. we did it bbq !!!
I would simply echo the statements of the other posters. I was highly impressed by the whole event from Friday evening on. Thanks to Eddy & Paul for their instruction as well as all of the others who worked somewhat behind the scenes to make it so enjoyable. I'm looking forward to learning more about my new addition to the family -- FEC100 already broken in by my fellow classmates!
I want to add my thanks to everyone involved. It was a great class and a great opportunity to hang with "BBQ Royalty" like Fast Eddy, Paul and Smokin' Okie Big Grin

I t was also great to meet so many other FEC cooks!

Of course, the most important piece of knowledge I took away from the class is that Smokin' Okie knows more about brining than the Food Network! Cool

Tells me you paid attention in class.

We love doing these classes and wish there was more time to just get to know each other. It's fun to meet people and faces of the forum.
