I am getting ready to smoke two pork butts with a combined weight of 18.4 lbs, in my 009. They are a little bigger than the usual ones I've done. I was thinking of putting the bottom one in with the fat down, and the top one fat up. Is this much of a big deal? I think on the other ones I've done, always two at a time, I put them in with the fat up. Butt these are bigger. I can't wait. Thanks

Many cooks like to have fat on big meats,between the direct heat source and the meat.

Cooking on a full, smaller CS,I sometimes rotate the butts,because the one directly by the woodbox will get some direct heat.Fat side down, by it, is also good.

Basically, they are pretty forgiving,although if you are doing long cooks/huge butts,flipping them over half way thru the cook helps prevent sticking,as mentioned above.
