I cooked 250 lbs of pork butts,6 racks of ribs 2 whole pork loins yesterday and wrapped nothing in alum foil.The meat was as good as what comes off my stickburner without the additional work.I found that the temp readout on the Traeger controller reads 18 degrees higher than the 2 oven tharmometers that I had placed inside the unit.

Unless the Traeger probe is where you put the thermometers, there will be temp differences but if you know the shift, you can set accordingly. I have two Traeger COM200s. One the probe is on the side towards the front, the other top and to the rear. Both read lower than middle rack readings with oven thermometers. The older (front) one is 50 degrees lower than reality while the newer (top rear) reads about 25 degrees lower.
To confirm and counter this I took an extra probe with long wires and placed it on a standoff (piece of wood with hole) in the middle of the rack. It was right on with the oven thermometers.
