Now that I have my FEC100, and have gotten my first cook behind me, I am considering some accessories for it such as the 7 rack adaprer brackets, meat probe and rib racks. From what I can tell, ecen with the adapter I would only be able to utilize 4 rib racks at most. Could someone please tell me if I'm on the right track with this? Also, I would appreciate any recommendations on other accessories I should consider.

I don't know that I wuld use 7 nrack at a time, but it seems like the brackets would lend themselves well to adjusting the distance between the racks I am using in the event that I am cooking something that wouldn't fit between the racks on my current 4 position brackets. I would see myself using 4 rib racks, I have already been approched to do some cooking for other peoples gatherings and I have a coulple a parties a year where it's not uncommon to have upwards of 100 people, so to be able to have the option to add racks would also be a benefit.
I have the 7 rack and I find it is very useful. At comps, I usually just bring four shelves, casue that is all I need.

However, yesterday I did a cook for my son's all star team and their family, which ended up being about 75 people or more. Kinda lost track in the park, as people outside the team kept coming by in the park.

I cooked 6 butt and 8 racks of spares (I did them whole, not St. Louis without a rib rack) and at one point, it was all on the FEC at the same time. I was able to move the shelves around as needed to fit everything.
