Too many questions
I suggest you just do a little reading here, as you won't have a huge different between the models, the methods will still apply.
Have you had it up and running? Verified temps, etc?
Because it has 3 pots, it will use more pellets, but I don't remember the exact amount. It will vary with the temp set, how often the door opens. But with the 3, it gets back up to temp.
As far as "good as a stick burner" that's a question that will never been answer. It's like the chicken and the egg. Problem is if you're used to oversmoked foods, you can't get that in the FE. You can get a heavy smoke by adjusting the cook to cook longer on the smoke setting, then bump the temp. But I'm sure you've see that in the FE100 posts. As the 2000 has the 3 pots, it tends to burn more wood and adds more smoke taste. Hard to explain without a LONG post.
I wouldn't adjust your methods a lot, just put some in and get to testing. We can help adjust after that. If you wrapped before, you may not have to, or you may decide to keep it that way.
Put a couple of butts in and see it (I don't know which dial you have) if it has the 225 or the line just below 275 (which would be about 240) but have it it, we'll help you out
