I'll try to keep this post up to day the next day. Now the details. I've got two butts about 7 lbs each. I treated both with CS rib rub. Then treated one with Honey Mustard coating and the other with a mix of spicy brown mustard and your basic yellow mustard. Popped them in the fridge at about 12:30 where they'll rest for the next 10-11 hrs. I plan to put them in my model 009 at about 11:00pm tonight. I'll take pictures at various stages to add to the posts later. Believe it or not, this is early prep for Super Bowl Sunday. I'll eat and freeze tomorrow and then due a brisket for super bowl so my party will have both. That's all for now. Good Q-ing this weekend to all.
