I'll try to keep this post up to day the next day. Now the details. I've got two butts about 7 lbs each. I treated both with CS rib rub. Then treated one with Honey Mustard coating and the other with a mix of spicy brown mustard and your basic yellow mustard. Popped them in the fridge at about 12:30 where they'll rest for the next 10-11 hrs. I plan to put them in my model 009 at about 11:00pm tonight. I'll take pictures at various stages to add to the posts later. Believe it or not, this is early prep for Super Bowl Sunday. I'll eat and freeze tomorrow and then due a brisket for super bowl so my party will have both. That's all for now. Good Q-ing this weekend to all.

Glad to see the report.

Don't know what temp you set the smoker, but you can up it to 250 to finish them off. You might pull them at slightly different temps to see if that makes a difference for you.

Pull the hotter one at 200 and the other one at 190.

If you want to experiment.
cool suggestion...I just took one out at 200..the other is still at about 180. I took the temp on up as you suggested (ran it at 225 steady from the start). Total cooking time for the first was 18 hrs. For sake of details, they are each about 7-7.5 lbs, but in my model 009 CS, I had to put one on the middle shelf and one on top. Not surprisingly, the one on top is a little behind the other. The one I took out looks real good...wanted to fall to pieces right a way. I double foiled, towel wrapped and dropped in a cooler for now. I'll take #2 up to 190 and go from there. Pics will come soonSmiler

Definately the best I've ever done...now this is only my fourth butt, but I feel good about it. I took out #2 at 190. Both pulled good, the one at 200 slightly easier. Used a sweeter sauce on one and spicy on the other...wouldn't you know it, I like to mix them a little the bestSmiler Mustard experiment was a good one I think...definately recommend. I'all add pictures in the next few days.
