Trying beef ribs for the first time in a fec120 today, the largest rib weighs 1lb 2oz. I've read a few posts and it seems they'll take around 3 to 4 hoursish @ 240f? Do I do the toothpick thing? I'm in the UK so you lot are probably still tucked up in bed at the moment. I'll have to hope one of you has insomnia. Thanks in advance for your help. My first go at uploading pics also, hope it works.

For the pic to show up in the post, you need the web address that has...[IMG] before it and [/IMG] after it.

As far as the ribs, some cooks will braise them in foil and juices the last hour or so and those will you just need to check by pulling on the meat to see if tender....other cooks will cook without foil and for those to be tender, you will need a finishing temp of around 200* internal temp.
