Trying beef ribs for the first time in a fec120 today, the largest rib weighs 1lb 2oz. I've read a few posts and it seems they'll take around 3 to 4 hoursish @ 240f? Do I do the toothpick thing? I'm in the UK so you lot are probably still tucked up in bed at the moment. I'll have to hope one of you has insomnia. Thanks in advance for your help.
