11 # butt on at 6 am at 225 degrees in CS 25, had to leave home for 3 hours & dropped it to 200 degrees while gone-just to be safe, then back up to 225. Opened twice to mop, probably not needed. Took 16 hrs to 195 degrees. Let it sit, then pulled nicely, yielding 5.5 lbs. of meat. Success came from reading the 101 series and all forum comments. Without these, would have panicked when the butt plateaued at 165 degrees for a long time. So, read all before starting, follow recommendations, and success will follow. Thanks to all posters.
