I just did my first ever brisket last night in my 008 following Smokin's directions and it is fantastic. Cooked it to 192 deg and sliced it, just melts in your mouth. I will have to say it did test my patience as it took 10hrs to cook a 4.5lb flat. I put it in at 41 deg, middle rack, and a cold CS. Outside temp was about 55 degrees.
It seemed to climb to 150 deg fairly steadily and then stall out. The last 3hrs I turned the temp up from 225 to 250 as I had to get to bed sometime. Can't argue with the results, glad I waited until it was "done". Just going to have to plan on starting earlier next time as I was expecting about a 7hr cook time. The first definitely won't be the last.
