We did out first catering job yesterday for sixty people. It came out without any problems. Cooked 60 pounds of butts, 25 pounds of potato salad, 10 pounds of coleslaw, and some salmon fillets. The salmon was for a guy whose religion doesn't let him eat pork. (I think I can convert him in time). There was a mix of people who never had pulled pork, and a couple from N Carolina who did.
White, Chinese, Mexican, Samoan, and others. They all raved about it. We were very happy. The person who hired us, was giving some classes for gate operators for fence. This was attended by business owners. They wanted our business card and menu. We picked up a few more jobs from this. The one comment I heard the most was that the meat didn't have a heavy taste of smoke. People could actually taste the meat and seasonings. Life is good!
