Got my smokette Tuesday; seasoned it that night. Put 2 racks of baby backs and a pan of beans in it yesterday afternoon. Let them cook at 225 for a little over 4 hours before I opened the door. The ribs were done, but not quite as tender as I like. Let them cook about 45 minutes longer and couldn't wait anymore (it was 9:00). I seasoned one of the racks with CS Chicken and the other with CS Rib. Both racks had a very good taste and are gone this morning (so are the beans). I know by what I've read that they should have cooked longer to get more tender, but I didn't really have the time. Anyway, it was a first time success. Going to do a whole chicken this afternoon.

Now for the question: was planning on cooking 4 or 5 racks of spare ribs Friday night, but don't see how to get them in my Smokette without cutting them or stacking them. Anyone got any ideas?

I don't think baby backs would take much longer than you did them. If they were a little dry, try to spray them every hour after the first 2 hours.

As for spares, you can usually fold over the end, or even cut the last bone off (you know, it's the one with nothing but fat).

Spares will take even longer. And I would definitely spray them down if your BBS were dry.

I figure I have to cut them to plate the end product, so I reached the point where I just cut them before beginning. Some folks will roll them before cooking to fit into the CS but I don't like that approach.
About apple juice.

here's a suggestion I don't hear mentioned very often.

Instead of using the juice in bottles, spray with just juice concentrate. take the frozen stuff let it thaw and DON'T add water. The water dilutes the flavor of the natural juice.

Just a couple of spray works great for me. I do the same with cherry and even pineapple. Haven't tried pina colada yet Wink
I am waiting for my new smokette to arrive maybe tommorow so I am not a Cookshack expert, but on my other smokers I have used rib racks. You will have to cut the spare ribs and since they are in the smoker vertically you will be able to fit alot more in their.
Can't wait to be cooking some ribs of my own this weekend after Isabel blows through.
