Did a 7.5 lb boneless butt today. First cook in new box and put it on at 225 and pulled it 11 hrs later. I'm dealing with two issues with my DW.

First, she doesn't like smoke much. As a girl, she ate a lot of pork seasoned with 'smoke in a bottle'. Now it almost makes her sick.

Second, she doesn't tolerate a lot of spice (read capsaicions). She likes savory and enjoys a wide range of flavors. I'm trying to convince her that BBQ isn't all bitter smoke, dried up meat, and hot sauce.

Today's pork was smoked with just 2 oz of cherry and then cooked to 190. Yes, I know thats not in the range for great Pulled Pork, but it was very moist, falling apart tender and tasted great!

I am looking for recipes for smoked mushrooms, vegies, and non-traditional uses of BBQ. Hope you can point me to some.

Here's a list of things I have done in the smoker. Maybe you can find an idea in there.

I would suggest trying a ham. Just buy a cheap ham, already smoked or not and smoke it for about an hour and a half. (basically just warming it up) They are delicious but can't tell whether than would make her happy or not.

Oh, and the smoker makes wonderful prime rib. Better than a restaurant if you get a good cut of meat.

uncooked bacon (just to add smoke)
hams - cheap and easy
jerky
cheese - all kinds
salmon
whitefish
swordfish
ribs
pork butt
beef brisket
roasts - prime rib, sirloin tip
almonds
turkeys
baked beans
Lamb
Pastrami
Don't think you will have as much problem as you're thinking, because with the CS you can control all your concerns!

Yep, just put a small amount of wood in and watch what kind. Some are more mild than others, so be careful on your selection.

As for the spices, you don't have to, simple salt and pepper will work on most stuff, maybe spray with apple/cherry juice for a small amount of flavor. You'll have to decide that yourselves!

On that PB, low and slow smoking will come done at a little lower temp and be nice and juicie, just like yours! I've done a few like this myself.

Find a sweet BBQ sauce for the Misses or just add a little honey for sweetness.
