Well, I did my first racks of ribs (10 lb. of pork spare ribs) in my 045 today. Trimmed them "St. Louis Style", as per the instructions/videos I found on this forum, gave them a liberal coating of Cookshack Rib Rub then let them sit in the fridge for 2 hours. Placed them in the smoker along with 4 ounces of apple and cherry wood. Closed the door and set the smoker to 225 degrees. At 3 hours I opened the door and checked em,, they were almost perfect so I gave em a spray of apple cider and closed the door for another 45 minutes. Finally took em out of the smoker, wrapped them in foil and let em sit on the kitchen counter for about 30 minutes until the wife was ready to eat. When we dug into them they pulled off the bone nicely and were just amazing. My wife, who normally isn't a huge fan of smoked food, couldn't stop raving about how moist, tender and delicious they were. She had 3 huge helpings of ribs, which is much more than she usually ever eats. I won't say how many I had but let it suffice to say I was stuffed beyond belief Smiler Before I did this cook I must've read "Ribs 101" fifty times as well as about a hundred old posts on cooking ribs. Tomorrow I'm making a 10 lb. pork shoulder and I can't wait to get started Smiler
