Last nite we had our first ribs. It took a little longer than the cookbook said. I set 008 on 225 put them in about 10:15am. I let them go without opening until 3:00pm. When I checked them they weren't quite ready. Left them in till 4:00pm then took them out put them in foil,in the cooler and held till supper. They were all consumed by today. Now Ill have to make some more and experiment with temps.and rubs. I want to tell all the new guys not to be afraid. I had read all scary posts about how hard it was to do ribs. My advise is just jump in and let er rip. Bo

Which cookbook? The one that came with the smoker? Or the "smoked foods", or another book?

It's pretty much my most famous statement, but ALWAYS keep this in mind when smoking:

It's done when it's done

That just means that BBQ isn't a recipe like a cake. One set of ribs can take 4 hours and the next take 7. There are just a lot of variations and with practice you'll learn those variations.

Just keep good notes and you'll improve rapidly on your own experience.
