Thanks for some great tips on the board. I simply cooked a 3 lb baby back rib rack for 3 1/2 hours at 225. Set it and left it alone. Opened it up and perfect ribs.

We use Fast Eddy's glaze for company ribs.
Mrs. smokinMAINEiac and I like dry ribs. Sometimes with sauce on the side, but mostly not.
They tasted great. Pags, I agree with the KISS method. I had some sauce on the side but the sauce kept taking away the wonderful flavor of the smoke and rub so I ended up eating most of the ribs without sauce as did my wife.
