Just loaded a 8.35# picnic shoulder, rubbed for 24hrs spiced rib rub.3oz wood hickory. quesstimate 13hrs.eatin and seasoning at the same time. I'm excited and smell like smoke to!! Larry

I used the second to bottom shelf,about the bottom middle of the cs.11.5hrs. 180degrees 14hrs.190d 14.5hrs 195d looks great bark is tasty,alittle dry.foil wrap for now with some apple juice. I will pull later and the family will be in for a treat. vinegarsauce,cheap buns home made slaw!!! Larry (zazza)
