I just tried out my 008 for the first time yesterday with mixed results. I tried a 4lb flat which I cooked at for five hours at 200. Internal temperature never exceeded 165. My oven's thermostat would not adjust above 200. (Is this normal??)I wanted to cook att 225. I also used an oven thermometer which I fed through the vent, along with my remote internal and the oven averaged about 207. I never opened the smoker for the complete five hours. End results were juicy, well cooked, good slicing , but flavor was a sort of bitter. Does anybody have any comments or suggestions?

If the dial doesn't go above 200, call CS Customer Service.

The bitter taste would be most likely from too much wood, or something wrong with the wood, the kind of wood, etc.

If the internal doesn't get to at least 185, the brisket won't be as good as it could be, probably tough.
