Decided to try out a brisket on my FEC100 and it turned out great. Bought a flat from Sam's and seasoned with some Cookshack Brisket rub as I am working on flavor profiles. Turned out real nice, very moist with a great smoke ring. Smoked at 180 for about 6 hours and then moved to 250 until it hit 203 internal temp then foil for about 2 hours. Very happy with outcome.
