OK,
I over cooked the loin last night by about 45 minutes and 15 degrees. So, today I was trying to make a pork something...
Came out great and spicey. Use for whatever.
2 tbl chipotle in ancho minced
1/2 onion
1/2 pepper anything but green
2 cloves garlic
2 cups pork choped
1 can diced
2 tbl balsamic vinegar
saute onion, garlic, pepper
add balsamic and cook 3 min
add chipotle, pork, tomatos
simmer for 5 minutes. Thicken up with tomato paste if you like.
Now, I cooked it in a cast iron pot that I used in the smoker for my beans the other day. It is transfering some smoke flavor to the food. NICE secondary use for that.
now eat as is or stuff into something or make a wrap.
Almost forgot, VERY SPICY!! I added rice to calm it down a little. YUMMMM
