In the past whenever I smoked butts, I'd pull them, then keep them warm in a chafing dish covered in sauce. Whenever there were leftovers, I'd freeze them and they always thawed out well and tasted great. Recently I started to not soak the pork in sauce, leaving guests to pick whether they wanted sauce or not, and what kind. Will pulled pork that hasn't been soaked in BBQ sauce freeze well, and taste good when thawed and reheated?

Sgt. Pepper - Here at home it just the wife and I. When we have leftovers they are always frozen. We just use the el cheap-o zip-lock bags and they work fine. We pack thhe meat pretty tight and roll the bags up to get out as much air as possible. I am looking into a vacuum sealer tho as I have noticed that anything left in the freezer bags much over 10 days takes on that dreaded freezer taste.

I am looking forward to hearing what others have to say as me and two friends will be cooking for a church fund raiser and may be cooking for as many as 300 people Eeker My SmookinTex and their WSM's. We'll probably be doing some freeziing.

I've been using a Food Saver to freeze leftovers, pulled pork included. I've always frozen it without sauce on it. I've never had the meat dry out or get a bad taste. It ends up tasting just like the day it was cooked only in some cases, better. I just put the bag (still sealed) right from the freezer into boiling water and it reheats perfectly. Sometimes I'll spray just a little apple juice on the meat before I seal the bag to add a bit more moisture but usually it doesn't need it. I provided 6 lbs of pulled pork and 6 lbs of chopped brisket for my Grandfathers 80th B-day party that I'd smoked 2 weeks before. You never would have known it was ever frozen....
I freeze any leftover pulled pork in muffin pans. After it freezes I pop the "BBQ muffins" out of the pan and freeze in Food Saver bags. Two "BBQ muffins" per sealed bag make two 4 oz. pulled pork sandwiches. They can be reheated in the bag with a microwave or in a small saucepan on the stove. Very easy and convienient.
