Yesterday, as I was prepping a couple of briskets to smoke today, I noticed something I've never seen before. The fat cap on one piece was hard,white and looked like the ones I've done before. The cap on other one was soft(almost jiggley),thin and kind of light yellow. It smelled just fine.

I picked them up in Cryo-Vac at the meat packer Friday afternoon so I don't think they sat around their shop for too long. They went right into the frig when I got home and stayed there until I trimmed them around 6:00 PM.


Has anyone one else seen it or knows what the deal is? And if so, am I going to die a horrible death if I eat the strange one?
