I am finished researching. While I am still interested in the SmokinTex I will probaby opt for a CS-Smokette. I like the idea it is made in the USA and from this forum the Customer Support is top-notch.

If I buy I will probably get the unit from Cabelas since they are cheaper incl. shipping. Does anyone know if CS will run a Christmas special?

Lastly, what other items will I need? What kind of theremometer? Utensils? Etc?

A great addition is the NU-TEMP 701 remote temperature probe. It is wireless and when you do an overnite smoke you can set min and max alarms and sleep in comfort inside up to 65 feet away while the Cookshack does it magical work outside and you can monitor the temps...

If you don't need the wireless capability, then the polder digital probe is a must have
with the Cookshack so you don't have to keep opening the door.

Welcome to the forum.

CS always runs a special during the Oklahoma State Fair (in Sept) so you might call them and ask. They're good people, just call Customer Service, ask for Karen and just tell them. They'll work something out.

First thing you need for you CS is to read the 10120 Posts and ask the 1699 members. Wow that's a lot of information. There's a lot of great info from a lot of great members.
You'll use it a lot, but you won't use much wood. At 2-4 oz per load, 5 lb wood will do 20-40 loads. You may want to experiment with different woods before stocking up. And, you can easily make your own wood chunks from any branches or logs you're interested in. See other messages here about various wood species; most fruit or nut woods work well as do maple, oak, and alder.
I have 2 cookshacks, a smokette that I've had for several years, and a model 50 from last Christmas. Had a couple of quality challenges with the model 50, but cookshack took excellent care of the problem. (They even let me cook in it once for a family party before I returned it. What a great attitude for customer service). Even if you have to spend a little more, the customer service is worth it.
If I had it all to do over again, I would buy the model 50 as my first smoker. Only occassionally need the room for a large party, but it is far superior for smoking ribs. The ribs are much better when they can hang in the smoker versus laying on a rack.
