As we have been discussing beef grading and how the gov't keeps pushing more into the higher grades[where we foolish consumers will pay more],here is some more help for the supermarket.

Doesn't explain the reason but seems percentage of beef graded Choice or Prime increased.

AMS report shows shifts in beef quality grades

During calendar year 2009, the percentage of all quality-graded beef that graded Choice or Prime increased, while the percentage of Select beef dropped, according to USDA's Agricultural Marketing Service.

The percentage of beef grading Choice went from 60.9 percent to 63.8 percent, Prime went from 2.9 percent to 3.2 percent and Select went from 35.8 percent to 32.7 percent.


Seems like they want more and more of that hamburger to wind up as steak?

Does this help us believe we are doing better in this economy??

Remember when the Carter administration,in the down economy,moved all the select up to choice,and made the ungraded select?

Yep,folks where you are were raising feed corn for ethanol and that got the prices up enough to make farmers well-for awhile.

Go to the feed lots there and watch cattle sell.

See if the slaughter buyers are looking around for corn fed beef. Roll Eyes

Yes,bloodstock farms,might keep a few more heifers,and steer a few more young bulls for custom sales.

Creekstone Farms in your area would do that.

grading has been one of those things that "worries" me, because it is subjective and based on human interpretation (even when they use the hand scanners).

Why wouldn't a producer want more of the higher grade since they'll get paid more.

I know some of the choice I've gotten shouldn't even have graded at select.

Yep,some contests wanted your meats to be in the original wrap/cryovac,etc for morning meat inspection.

Now most of us try to prep at home,since we opened a lot that couldn't be used.

You toss them in the dumpster and go to the markets.

This weekend's contest,we open a high priced packer,that had three large slices in the flat. Eeker
