Yes. I begin with a mirepoix of lightly sautéed onion, carrot & celery. I add in broth prepared with the neck, giblets and wing tips. The end result is used for gravy.

The addition of the under pan will increase moisture in your 025. You might consider dumping moisture by opening the smoker door every now and then...45 minutes or so.

Sure you can. But make sure the size of the pan doesn't hinder/affect air flow of the heat/smoke.
Also be careful of how much smoke the pan drippings get. The first time I did a turkey in my 020, I just dumped the entire pan drippings in like I normally would when cooking the turkey in the oven. The amount of smoke that the drippings picked up made the gravy almost inedible. Put in a little at a time and taste test.
