I have an 008 and would like to smoke two pork butts over night. However I read on the Forum about the potential of fires. Is this a real problem? My 008 is inside my detached garage. Is there anything I can do to prevent this. I couldn't sleep worrying about fire. Any suggestions would be appreciated. Thanks, Jady

I can't picture a fire in an 008. I've had one for over three years now and take no precautions.. however, I've never smoked overnight.

The purpose of a smoker is to CONTROL the environment such that there is no fire.. rather smoke, which comes from incomplete combustion.

The smokebox gets hot enough to create fire.. but to have fire you need three things, as I remember... Fuel, Oxygen and a heat source. With the smoker, you have the fuel and heat.. but, you don't have sufficient oxygen in the environment to allow combustion.

Similar, you could set off a spark in a fuel tank of a car and nothing would happen.. cuz there's a missing component.. Oxygen.

I cook mostly birds and spares. birds take 3-3.5 hrs (small 12# turkeys take 3.5-4 hrs). Ribs take about 5 hrs. All the butts I have cooked, which number only about 8 take about 8 hrs. The butts I cook I usually buy at Costco as a two pack cryo. What are they.. about 6.5# ea?

I seem to have shorter cook times than those reported by many here. I've tested my thermometers in both iced and boiling water. I cook to the temps recommended here on the forum... and I cook everything at the highest temp the 008 allows.
Both my 050 and my 008 have shorter cook times than others report. Like Smokenque, my butts usually take about 1 hr/lb. Brisket flats rarely take 1 hr/lb but full packers take a hair over 1 hr/lb. Chicks about 3-3.5 hrs. Even 12lb turkeys between 3.5-4 hrs. Dont know why. Never questioned it. Just accepted it and cook accordingly.
