I have a 250 smoker that I purchased to do smoked summer sausage and jerky from deer meat.

If I rotate the summer sausage, it cooks fine.

The jerky gets cooked but it looks like boiled meat. Only the ends brown I rotate the shelves from top to botton and turn them around from the back of the oven to the front. Nothing helps.

I am using ground meat not strips of meat.

Anyone have any suggestions on how I can get jerky that looks delicious instead of jerky that looks like it was boiled?

Sounds like a moisture issue. I have not done ground meat jerky but it sounds to me like you might want to give the Q-Dogg method a try.

Take a look at Mainely Dave's website. He explains the whole process (a couple of times) in a photo-journalistic way. Very informative and easy to follow. Dave comments on the outcome and what he would do next time, changes, etc. Worth a shot.
