Ok I bought some spares from Walmart when I got
home I noticed that there was some sort of solution in the cryovac that the spares came in.

Cooked them up just fine like I normally do (same techniques and spices and all and they looked fantastic and all) but dang if they didnt
come out tasting kinda like a salty ham...was very disappointed and I am beginning to think it may have been this solution they came in.

Anyone else experience this? Are all spares and
baby backs now getting this solution too, or is it a Walmart thing?

Another thing I should have done a St Louis cut on them the brisket bone was all fatty and the meat that was there tasted worse...

I cant remember if I saw posts some time back on the forum here or on Ray's forum about this...but it has been some time since I have visited...

Should I stay away from those folks? It was late last night when I went shopping and they were the only ones open at the time...

Hi Roger,

I dont have the label, but it was indeed injected
with some sort of solution I did note that. It
was the usual labelled product for their pork
products but I dont recall the brand name.

I am just going to resort to other suppliers,
I didnt like the tast of the ribs and I have
done them before without this flavor in them,
so I dont beleive it was anything I did...

If you think of that "hammy" taste as a cured taste, that will help understand it.

Ham is created by curing pork, with salt solutions over a period of time.

Injected pork, or even a good salty rub overnight will start curing the meat.

I agree with Tom (as usual) don't rub overnight if you're getting the hammy taste.
