Not smoking today, but I did two pounds of jerky yesterday. Used Hi Mountain original cure and Qdoggs recipe. Turned out great. And so...today I sliced and am curing five more pounds. I will smoke it tomorrow. Never thought it would be this easy to make awsome jerky. My thanks to Cookshack and all the posters here for their recipes and advice.
Mudgie,I have made jerky in a dehydrator before, but not my CS.Any pointers that I should know about to get started doing jerky. What type of beef, cook temps & times, how much wood, recipes, etc.any help would be greatly appreciated.
Richard, this weekend is my first time doing jerky. I followed Qdogg's recipe using Hi Mountain original jerky seasonin and cure. If you look farther down the list of topics in this forum, there is one about Qdogg's recipe with a link. There are also lots of other posts about jerky which should show up if you do a search. My second batch, in the smoker now, I am doing at a little lower temp - husband wanted the jerky a little "less done" - I'm not sure what that translates into, so I'm trying a lower temp and may take it out a little sooner.
