The smokers are really nice, but they are designed mainly for smoking sausages, salami, etc. Also, the heating element/pan is mainly designed for using their own brand of sawdust instead of wood chunks. They call the sawdust a "smudge" when slightly damp and they swear it works better than wood chunks. I am skeptical about this and also, most people can't create their own sawdust in sufficient quantities for using with these smokers, thus forcing you to have to buy the sawdust from them.
They say that you can use wood chunks, but there is no box surrounding the pan.
The smokers seem to be very high quality as are Cookshack models, but the specific designs toward sausage and sawdust kind of changed my mind about considering sausagemaker. They have an incredible catalog though of all kinds of wild stuff !!
I am sure Cookshack smokers would make excellent sausage product too. Hey, you could still get your casings and meat grinders and sausage seasonings from sausagemaker and then smoke the sausage in Cookshack smokers !! LOL
