Be sure and take explicit notes in a journal used exclusively for this hobby. It will help more than anything. Remember to include anything pertinent - meat temp start and end, outside temp start and end, cooker temp setting, meat weight, proximity to heat source, recipe specifics, hold time, amount and type of wood, grade of meat, etc., etc.
