Thanks a lot for you info guys. Just to let you know, I asked a littel too late and started the cookshack up last night at 11:45PM and took em off at 11:45PM. First time the door opened! Cooked cold from frig and had temp set at 235. They were the best Boston Butts I have ever made. Maybe the best I have tasted anywhere. My wife asked me two or three times to swing open the door and check on em but I kept my faith to a tastful finish.
