hey guys,
My first butt took 20 hrs... so for my second, which is due at 3:00 tomorrow at my mother-in-laws house, I started it at 6:00PM today, thinking with up to 4 hours of cooler time, even if it finishes faster I'll be ok (allowing time to pull, and travel). Well, this baby is at 150F after 5 hours at about 210F...

So, if this thing really does finish in 12-16 hours, what is the best way to hanlde it for serving at a later time?

Thanks for any advice... I hope some of the experts are up late tonight....

Thanks for the advice. My concer was it could be more than 4 hours, and I wanted to handle it the best way possible.

I ended up dialing the CS temp down to 200-205ish, and slowed the cooking down where it is going to hit within the 4 hr window now. I hope it doesn't turn out too dry, or have other adverse effects from the slow cook.
