I've had a cookshack for a couple of years and I've smoked ribs, chicken, pork butt, fish and I've been very happy with the results.

Over the past year, I became ill and I have been placed on a very restrictive diet. I can still eat all kinds of meat, poultry, and fish, but I can no longer use any sweetners (except for honey or date sugar). I am also unable to use powders (onion and garlic) although I can use real onions and garlic (I can use most spices if they don't contain any kinds of starch which most processed powders contain).

Anyhow, I really miss smoked foods and my cookshack is gettin' kind of lonley. Does anyone have any ideas for rubs that will fit my restrictive needs?

Any help would be greatly appreciated!

Sorry to hear of your health setback!!

I would just go to a paste instead of a dry rub. Simply replace real onions and real garlic in place of any powders and use fresh herbs for any other ingredients.

I would then use a food processor and whip everything up into a nice firm paste...use the same as a rub.

This should work great...maybe even better than your old rubs!
I believe you are in luck! Buy some fresh chopped Garlic, packed in oil, rub that on the meat. Chop fresh onions, rub that on.... add dried herbs such as thyme... after smoking 90%, drisle honey on the meat, if you need sweetness... then finish off. I would think the honey may burn if put on initially...

Another idea would be adding honey to mustard, then mix in garlic, minced fresh onions, salt, pepper and thyme, then brush that on the meat, before low temp smoking... I wouldnt think that would burn.... I will play with that and see what happens...
