I have found that turkey wings are usually just plain tough, no matter how i made them, I have injected them with butter,white vinegar a bit of hot sauce and some salt and pepper. They come out tasty, but tough, I have smoked them, deep fried, and grilled.
Thanks folks, They turned out pretty gud. I Brined them overnite, dusted w/COOKSHACK rub, 1/2 oz hicorky, 250 degrees till they hit 170 degrees (bout 3 hrs). Set on the broiler to get the skin crackin.
Yes, i pulled them at bout 3 hrs and set them in the oven. They were tuff though. Shud have kept them in the smoker longer? Thinkin now the 170t temp i saw was maybe the plateau (spelling).
