Here are pictures of my second attempt. It's still a small butt, 4.5lbds, but it's from the butcher this time. I'll have to call ahead and have him cut me a bigger one next time. This one I just rubbed with mustard and spices again but left it in all night. From 7:00 a.m. - 8:30 p.m. I got to 200 degrees. It turned out great, maybe a bit to brown. I need to time it so I can get it mopped a few times. It was better than many meals I've had out. Can't wait to try again!
