Hi, all,

It's going to be here before you know it. Thanksgiving, that is. We usually have an oven-roasted turkey and a smoked turkey, something for everyone. And we have our traditional family favorites side dishes which includes stuffing, yams, mashed potatoes and gravy, my friend Martha's cranberry jello relish, and so on.

How about posting our favorite smoked turkey recipes, as well as recipes for side dishes that go well with smoked turkey?

We "think" each year we're going to do something and try something different.

Well....each year, it better be roast turkey and the normal fixin's or there is a riot at the smokin' house.

Now, before and after, with the abundance of Turkey, we do some different things.

Let's hear from everyone.

This year, I believe that I've got my wife, Rita, talked into helping me make a turkey following a Mexican recipe: Pavo con mole poblano, which means turkey with mole poblano.

Mole poblano is a mixture of chile, peanuts, Mexican chocolate, spices and aromatics.

When prepared properly, it's outstanding. I had it in Mexico City at a restaurant, El Pavo Real (The Royal Turkey), that specializes in Turkey dishes.

I have tried the bottled mole poblano, but don't really care for it. I've hunted down some recipes on Mexican websites and will go with the one that I believe will taste most like what I had.

What other side dishes but beans, tortillas or bolillos (French rolls), maybe some rice, salad, etc?
