I just recently made up a batch of their Original Blend using strips of london broil half hickory smoked and half w/out smoke. I also did a second batch of beef sticks (ground)for the kids using the Hi Mountain Mandarin Teriyaki blend. Here are my results:
The Original blend was tasty, but a little salty for my taste. I'm going to use the same ammount of cure and cut back a little on the spices next time to see if that makes a difference. I'm probably going to cut back a teaspoon of the pre-mixed spice and substitute a teaspoon of coarse ground black pepper.
On the Teriyaki I'm going to bump up the spices a bit. This one seemed a little weak to me. I also wonder what would happen if I used O.J. rather than water???? That might be interesting.
So all in all I would have to say that both of them came out very good. The guys in the office really liked them. But you can always tailer the recipie to your own taste. The directions are just a guide to get you started. You can safely adjust the ammount of spice or even add some of your own. You'll probably want to leave the cure ammount and time as recommended unless you really know what your doing so you don't get sick!
Kick up the spice and let us know how it comes out. I've got some of that same mix, I just haven't tried it yet. So let me know how you make out!
