Hello pelletheads,
I started the FE up on 180* and at that setting it goes to 250*-275*. I open the door and cool (while it's running and at another time, while turned off) and it still heats up to those temps.. Now, in prior posts, I have lamented burned up gaskets (haven't had that happen latley) and am now wondering if the high heat could have messed up the thermostat probe.
Any ideas?

I really need to write things down so that I only have to post once. I just chacked it and on the 180* setting it's at 295* and the fan never shuts down. Don't know if the auger ever takes a break from dumping pellets.
I hope that's all the info as I don't want to type anymore.

Actually, I'm not sure if this is a fix or not. I loaded it up with 14 butt's and it held temp. almost right on. Have done this 2 more times sinceand come to the conclusion that the FE (mine at least) likes to be loaded down. If it's only got 2 racks loaded, it will stay closer to the set temp. but not as close as a 3/4-full load.
I should probably call Cookshack and get their opinion though.

My cooker likes to be loaded somewhat also. But this all part of learning your smoker. Just because there is a thermostat on the smoker that can be set to 240*, I don't believe it will always be sitting at 240. I just make adjustments. But my particular FE has always been fairly good at holding temps with small swings.

mine does just like ribdog's does. i did find out one neat thing for mine though. if i start it at smoke setting and use pecan pellets it will stay around 145-165. if i use pure oak pellets it goes right on up to 200-225 no matter what i do. did a little research and found out why. oak has more btu's than pecan!!! and that's a duhhhhhhhhhhh!!!
