OK. I'm planning ahead and will get the turkey into the Smokette early enough tomorrow morning so hopefully we won't be stuck waiting too long past the appointed dinner time for the bird to be done. My question is...what if it gets done way early? What is the best way to hold it til time to eat? Should I just foil it and put it in a cooler, hold it in the Smokette at 140* and hope it doesn't dry out? Foil it and hold in the oven? My test turkey last week was done right at dinner time, so I didn't have to worry about keeping it warm. It was fantastic thanks to all the good suggestions I've read here on the forum. Now I want tomorrow's bird to be just as great.
