Going to put my turkey in to smoke in the morning. Not knowing the time differance between when it will be done and when we will sit down to eat it, about how long will the CS hold it without drying it out? Can I turn it down to 140/150 for a few hours if needed, or should I take it out and wrap it and put it in the cooler? I know the CS is very moist, so if I keep the door closed will drying out be a problem?
