I am new at smoking. I have a SmokinTex with four shelves. I don't have hooks yet. I have 4 full slabs and they are to long to lay across. I could go diagonal. I want to get the smoke flavor on all the slabs. I am putting them on in the morning to have them around lunch. I'll get back to you before and after to see if anyone has replied and to give you the results of how I worked it out.

I did not cut them right at the half point, but I cut them so they fit on the shelves good and still left some open spaces around the meat. I also used some different rubs to taste the difference. I only have hicory wood right know so I used 3 oz.at 225 and 3 hours later I Sprayed them with apple juice. I removed a section I had cut off to bring in and try because they looked and felt done. I was right. They are wonderful. I left the rest in for half an hour more to soak up the apple juice alittle more. Its lunch time and I have a crew ready to eat. This was the third item I have smoked and already I can't belive it took us so long to get a smoker.

I have some rib hooks ordered and are waiting for them to come in. No I couldn't wait so I jumped right in with out them.
How do the hooks work? Do you hook the larger end or the thinner end? Is it better to cut the whole racks up? This first time things went quicker than I have read. If I use the shelves again I will rotate them sooner and spray with the apple juice a couple of times. The ribs closer to the smoke box cooked quicker and were a little drier, but I had not expected them to cook so fast. Everyone still loved it, so it was a good smoking.
