Hey Darcy,

I think John Shifflett in manufacturing told me that your unit needs about 137�-140� to produce smoke, if you are producing chipotles.

I think it will operate much lower but no smoke.

I'd give John a call at the plant and see what he thinks.

You will probably want to open the door some to let moisture out.

If no luck ,give me a shot on Monday and I'll share what I know.
