Often folks ask can I use a cookshack smoker in cold temperatures...
A few of days ago while visiting the local grocery store I saw a choice packers cut brisket on sale with my name on it.
Well I brought it home of course.
Last night was the first night here with no snow in the forecast, so I got it ready (rubbed it with cookshack brisket rub, about 12 hours before putting it in the smoker) and popped it in the ole smoker. I set the temp to 190 degrees and happily went to bed
.
When I got up it was 3 degrees BELOW zero so I bumped the smoker temperature to 225 degrees and sat back to wait for my brisket.
Well as you might expect the times to completion were as expected and the brisket and burnt ends were just wonderful.
So what did all of this mean????
Well I just don't know the time was as you might expect for a brisket, did my smoker run a bit more than usual, who knows?
But for those that wonder... The smokers work at low temps as well..............
