I'm smoking an 8.5 lb pork butt shoulder tomorrow in 025. I plan to use Hickory. I was curious whether people put all the wood in at once, add in increments, and how much they use
Thanks ... I put one 6 oz chunk of hickory in. I preheated the smoker to 260F. The butt is at 140 after 4 hours. should be done for a 6:00 dinner I suspect ... I injected some apple juice/rub/water mix the night before, will that effect the timing?
I've never found a need to preheat the smoker for cooking a PB, could be just me. I guess maybe I just don't like getting smoke in my eyes for no reason, oh well, too each his own.
When I turned the smoker on it was measuring 26F inside, figured it needed some time to heat up. I put the Butt and wood in at the same time so no smoke in my face .....turned out quite well.
