Bought a concession trailer with a CS 150. Kinda scared of it from things I have read on the forum. Mainly is was the CS home users forum with the Smokettes.

How critical is the amount of wood? I certainly do not ant to create any creosote!
I don't have much time to "tune' it in. I also own a Fast Eddy pellet machine. It is just about idiot proof. I really love this machine. I understand that CS will be building the oven part for Fast Eddy, and he will install his (Traeger) works. Fast Eddy speaks very highly of the CS but I need to hear from experienced users! I bought a sample box of the CS chunks they offer however here in NE Georgia there is plenty of hard woods. I have a pile of nicely seasoned hickory that I was hoping I could use. But how much? Am I going to have to scale my wood? How about a split from a log the length of the wood box and say about 2 inches across the end? Or???

Your help would be appreciated. I certainly like the electronic features. It surely appears that once i become familar with the unit I'll probably like it but I am looking for consistency like my FE 100.

You didn't mention what you intend to Q, tho I assume you meant pork.

I use as little as 3 oz of apple wood for my maple cured smoked trout, 8-10 oz of hickory for pulled pork, 6-8 oz of cherry for loin backs. If you want a smokering, add 3-4 charcoal briquettes to the mix.

Thanks TopChef. Will be smoking pork, spares, and brisket. Was just talking to someone last night and suggested turkey breast for sandwiches. Sound interesting but don't want to get to complicated! we'll see. he also suggested I definitly chunk the wood instead of a single long piece. Guess I might need a scale until I get the hang of it.
