As a layman, I am reaching out to you pros. I have done PB and shredded them for great PBBQ. But I got to thnking as I was eating sliced pork today at a local resturant. I have 4 PB in the freezer and I would like to take one smoke it like I always do and then slice it for nice half inch slices and then put them in freezer bags for later eating? What needs to change in the smoking and finishing to do this and what other things do I need to consider fat etc for this to work out. Or do I need a differnet type of Pork? Thanks in advance you have always helped me.
